Chive Blossom Butter

Ingredients
  • 1 cup (2 sticks) unsalted high-quality butter, softened
  • ¼ cup loosely packed fresh chive blossoms, cleaned and gently pulled apart
  • 1 tbsp finely chopped fresh chives
  • Zest of 1 organic lemon
  • Instructions
    1. Prep the blossoms: Gently rinse the chive blossoms and dry them on a paper towel. Pluck the tiny florets from the main blossom head and discard any green stem.
    2. Mix: In a bowl, combine the softened butter with lemon zest, chopped chives, and salt. Fold in the chive blossoms last to keep them whole and visible. Alternatievly, chop most of the blossoms, fold them in, and press chive blossoms lightly to the edges.
    3. Shape + chill: Spoon onto parchment or wax paper, roll into a log, and twist the ends. Chill for at least 1 hour to set.
    4. Serve: Slice into coins and place on warm bread, roasted vegetables, or anything from a summer grill.
